in photoshop you have different lasso tools, as well as the pen tool...those are options. it really depends on the picture how difficult this may be, or how easy.
Easiest way to do it (assuming Photoshop but I'm sure same capability is available in other photo editing software) is to use a mask. There are several ways to use the mask. But, basically what you want to do is mask out the current background then place the new background behind the masked photo (in the layer window have the new background below the masked photo).
What the mask will do is hide the current background and let you see the new background.
Mike :)
P.S.: There are several good tutorials, on this site and others, to explain how to use the masking feature.

The pen tool is your best friend. Get to know it. I have looked for thousands of short cuts and if you are picky none of them will really be that great. Hair is an art form...masking hair is my nightmare but somehow when faced with the challenge I usually pull it off but it is rarely ever the same steps twice...unless it is on a clean background, then it is fairly easy.
