I had set the focus area to just off centre to get the drops of water on the camelia nice and sharp. The camera did the rest

I want to say that in autofocus mode normally the camera focus at the centre by default. Here since the centre of the flower is off centre it is out of focus but the petals below are in focus range. When using tripod and for this type of stills switching to manual focus will work better. Some cameras also offer flexible focusing point like Sony and some models of Nikon.
