If I'm using the 5D I'm in Manual mode 90% of the time. If I'm using the 400D then I'm in P mode 80%. I rotate between the other modes on both depending on the situation or shoot.
If I do shoot in Auto it's because I want to see what the camera suggests for a scene or I'm just lazy.
I shout in either Av of Tv with EV compensation, It all depends on the shot. Before I take each picture I decide which will be the most important factor on the image, the aperture or the shutter speed. I never use auto as I have no creative control and it does not produce a RAW file. Sometimes I will P, if I am using the flashed in sync mode.

If I am shooting action stuff during the day....auto because of the time, movement and getting the shots I need. Action stuff at night is P so I have some control to get what I need. Everything else I shoot is experimenting because I have so much to learn but M has become a favorite with camera and lens.
P - All the way, all the time
except when someone offers to take my picture near picturesque places - then depending on what they are holding, sometimes i just discreetly flip over to AUTO and hand them the camera. ;-)
Another question though - if you use P, which AF point do you use - single center point (Half-Press and compose) or all available ones?
Usually, I take a few test shots in AUTO Mode, just to see what the chip in the camera recommends. Sometimes it surprises me. But most of the time, I use Aperture Priority. More often than not, controlling the depth of field is the key to the composition of a shot, and that is governed by aperture. By the way... good question. I enjoyed reviewing the opinions of the others on this site.
i use manual mode, where required with compensation & i have full control on exposure. and sports for higher shutter speeds, Tv mode, and in studio, with flash, manual and with lamps Av mode. sometimes when i want to be free from these hassles, i switch on to P mode in day light and no botheration of DOF.
